Breakfast & Supper

Hello! I'm happy to be popping in tonight to share a couple of recipes I have recently tried. Great thing is they were both very tasty and super simple! I'll begin with the Breakfast In a Biscuit recipe. I decided to try these after seeing them on Tina's blog, The Cluttered Corkboard. I had been wanting to try my hand at making some breakfast pockets to keep in the fridge ready to go throughout the week. I hate buying too much pre-packaged convenience food, but I had gotten in the habit of buying Toaster Scrambles. They aren't too bad, but are full of preservatives and other things I can't pronounce, so I know they aren't a good breakfast option for us. You can get the complete directions at Tina's blog, but here are a couple pictures of mine.

Here are the four ingredients.....flattened canned biscuits, scrambled eggs, cooked sausage, and shredded cheese.


Place a spoon ful of egg and sausage in the center, sprinkle on a little cheese, fold over, and seal the edges with a fork.


Pop in the oven....


until golden brown.....


then, plate one or two up and enjoy. So yummy!


I had enough ingredients left to make 8 breakfast burritos as well. I actually could have made 4-5 more if I had the biscuits or tortillas but I ran out. Pretty inexpensive for several days of breakfast. I used an 8 pack of Grands biscuits, 8 flour tortillas, one package Jimmy Dean original sausage, 12 eggs, and about 1 1/2 cups Colby Jack blend cheese.

I also tried a new Ham & Swiss Sliders recipe I found on Pinterest. They were oh so tasty! You can find the recipe here. These were  a nice change of pace for supper. They were really quick to put together and only took about a half hour to bake. Served up with some Kettle Cooked chips, they were a delicious supper.
First, I sliced a dozen Hawaiian sweet rolls in half. I left them all attached to do this.


Next, I layered on 12 thin slices of ham.


And 6 slices of swiss cheese.


I mixed up the dressing which is made from butter, worchestershire sauce, dijon mustand, and poppy seeds.


Place the top half of the rolls on .


Coat generously with the sauce mixture and stick in the freezer until the butter hardens.


Cover with foil, pop in a 350 degree oven for approximately 30 minutes (sorry, I forgot pix) remove, and enjoy!


Doesn't it look tasty? The sauce makes these little sliders for sure!


That's it for today folks. I am happy to report the cough is still improving and is nearly gone. I have had so much more energy which is a good thing since I was behind on everything.   10. Oh Vicky, you made my mouth water and my tummy growl :) I have made something similar as your breakfast dish, but I made it for supper. I love the idea of using eggs for breakfast - definitely trying that one :) Thanks for sharing these great recipes.
